Best brownie recipe ever
When Wes was called upon to make something that would help Jackson understand his place in the Yukon, he knew he needed something chocolaty, the more chocolate the better and given the amount of time he had to pull it off, he didn’t want to be looking for a recipe. This recipe comes from Isabelle’s grandmother. In the early days of cooking, favorite recipes come to mind without a recipe card. Wes has carried it in his brain since he can remember and has pulled it out when ever chocolate is required
Ingredients
- 4 eggs
- 2 cups white sugar
- 1 cup melted butter
- 2 tsp vanilla
- ½ cup cocoa (or closer to ¾ cup if you want a darker chocolate flavour – Frys cocoa is best) We know that Jackson likes it chocolatier.
- ½ tsp salt (kosher gives it a more interesting taste)
- 1 cup flour (mix as little as possible after adding flour)
- Walnuts optional
Directions
Bake in 9×13″ pan at 350 deg for 30 min. (plus or minus 5 minutes depending on whether you like ’em gooey.)
Notes Half the recipe makes a 9×9″pan but why would you want half?
These Chocolate brownies are meant to be served without icing, but for Jackson’s birthday, Corrie reminded Wes that Jackson loved the biggest chocolate flavor possible, so icing. Try them both ways and let us know.

Grandma’s Simple Butter Icing
This is a very simple recipe, very like the one our great grandmother would have made. Living a pioneer lifestyle in the woods, she loved recipes that tasted good but with no fiddling. If she didn’t have butter she would have used Lard which has no taste, whips up beautifully. Grandma would have been using a fork and a hand mixer. Enjoy your modern convivences.
Ingredients
- 1 cup butter, room temperature
- 2 teaspoons Vanilla Extract
- 2 ½ cup icing sugar
- coco powder
- ¾ cup Unsweetened Coco Powder
- 1 – 2 tablespoons milk
Directions
Mix vanilla extract with butter on medium speed until well combined.
Combine sugar and coco powder with a fork. Add powder ingredients to butter mix and beat on low until mixed. Then increase the speed of mixer until frosting gets light and fluffy. Add milk as needed to get the consistency you want.
Notes
If you are only icing one pan of brownies, you can cut this recipe in half, but why would you. It tastes just as good on a spoon as on your baking.
